I'm trying to delete some text from PDF. How do I go about doing this?

I checked the security settings which are:
Security Method: None
User Password: None
Master Password: None
Printing Fully allowed: None
Changing the document: Allowed
Content Copying or Extraction: Allowed
Authoring Comments and Form Fields: Allowed
Form Field Fill-In or Signing: Allowed
Content Accessibility Enabled: Allowed
Document Assembly: Allowed
Encryption level:

Should I be able to make changes? We get sent this sheet with Cost prices on which I can't forward on to people. Therefore if anyone knows how to amend this it would be much appreciated.
