Topic: Editing PDFs without the original files

The creators of my friend's website were fairly clueless and not very talented, so I volunteered to help update the site and fix several things.
Among the things to be updated and fixed are a few PDF files containing dates that need to be changed, and text edited, etc.
After using the Adobe Acrobat Pro 30-day trial, and after looking through the other posts, I've realized that I need to do something else, and I'm looking for advice on the best way to go about this. I can't edit (or even delete!) any of the text because it's all in bizarre fonts that I don't have or care to spend $300 on.
I fixed one document by opening it in Acrobat, copying the images, pasting into my word processor, and retyping and formatting all the text. It was a big pain, but it worked.
Scansoft's PDF Converter 2 would be perfect, however I don't use Microsoft Office.
Any wisdom you could share would be greatly appreciated.
