Topic: How to edit extensive text as in Acrobat 5?

I used to use a bootlegged Chinese version of Adobe Acrobat 5.? (in English). I used it for filling out job and grad school applications, which it performed beautifully by allowing me, with a text box creator tool, to write text in any font or format anywhere on an existing pdf document.
Then my computer was stolen, and I now have a legit copy of Acrobat 6 Standard that does none of what my bootlegged copy did!
The most I can do is use the Touch-up Text tool (which my other version had as well) to laboriously change a few letters at a time. Before I could write whole paragraphs, give them a transparent background, match the font to the original documents, and adjust line spacing so that the paragraph settled nicely onto the lines provided on an application form!
What am I missing?? Has Adobe regressed over the years? Was I just lucky to have found a brilliantly hacked Chinese copy?
Any help would be greatly appreciated!!
