The "trick" is that you mustn't flatten the layers in Photoshop. In other
words, the text must be in its own editable layer when you try to save as
EPS or PDF. If you save as EPS, you have an option of saving vectors
for text or any shape layers. If you save as PDF, you an option for saving
vectors for any shape layers and text for any text layers plus embedding
fonts. Once you "flatten" a Photoshop image to a single layer of raster,
forget about any vectors or text.
In general, I would agree with Aandi, and that except for special effects,
Photoshop is really not a particularly good vehicle for text-intensive
artwork, including business cards.
