That's correct, yes. After you drag this control onto your form when
designing it in Designer 7, you specify the e-mail address that the form
data should be addressed to. Then, when the end-user is filling out the
form in Reader/Acrobat 7, and they click the E-mail Submit Button and a
new e-mail message is opened (using default mail app) with an XML file
(containing the form data) automatically attached.

Yep, I wouldn't have expected Adobe to publish this level of detail on
their website. It's pretty scarce and you have to consult the product
documentation or an articles (such as the one I wrote and the other
hundreds at Planet PDF and other sites). The user to user forums are a
good place to go searching too. Additionally, you can actually download
an evaluation version of Designer from the Adobe site at the following
link, but I'm not sure if this would yet be v7 or still v6 -
http://www.adobe.com/products/server/adobedesigner/main.html.

There isn't an explicity 'save form data' or 'export form data' feature,
but there's nothing stopping you from right clicking on the attached
.xml file (attached to the empty email message as I described above) and
saving it to your disk.
