Are you trying in Reader 7 or in full version of Acrobat 7 (Standard or
Professional)?
In order to work in Reader 7 (as well as 6 and 5.1), the document would
need the Extended Forms Rights.
I have been able to show and hide templates in Acrobat 7 Professional.
