I forgot to mention that Acrobat Professional's PDF Optimizer feature allows you to save in older PDF versions. I assume it's smart enough not to include features that are not available in the older versions.
We are still in NT and Acrobat 5.0 here, so it will be a long time before I get firsthand Acrobat 7.0 experience.
