Okay -- there isn't much new in terms of Acrobat based forms
(AcroForms), however with Acrobat 7 Pro you get the new version of Adobe
LiveCycle Designer (v7.0). This is where all the goodies are.

Designer does allow you to utilize your XML schemas, however can you
elaborate a little on how you're looking to use yours? You *can* bind
your XML schema to a form in Designer if that's what you're asking.
Do you currently use PDF forms that you've created in Acrobat? If so can
you give a little detail on how you're using them so we can highlight
any problems that may arise and need attention when moving to Designer.
