This assumes your PDF file already includes tags....
Start with the Tags panel. Select the chart on the page (using the
object selection tool), and then use the Tags panel option "Find tag
from selection" or some such (I am doing this from memory right now).
Once you've found the tag for your chart, simply select and delete the
tag. This should remove the chart from the "awareness" of any
screen-reader that looks for structure in the PDF.
