I only have Pro, but I suspect you can do it in Standard - not certain
about that. Someone with Standard want to chime in?
Now.. on the other hand, this only works for one page at a time, I
think. Moreover, the file that results is a CSV - that's not likely to
work for your funky characters.
I think you're best bet is to get the table out in RTF form, if
possible.

No. You can do this with other tools such as Pitstop.

Ooh... depending on the font encoding, this might be an issue.

Try Adding Tags to your PDF, then try a Save_As RTF. It would be best
to start with a 5 page sample or so, as Adding Tags on such a large doc
could easily crash Acrobat.
If the Add Tags function isn't "seeing" your tables correctly, then you
might want to consider correcting the tags. Then, you'll get good
results Save-ing to RTF, Greek characters notwithstanding.
Send me a couple pages of your document offline, and let me have a look,
and I'll let you know what I think - I'll show you the results you'd get
with Acrobat 7, anyhow.
