Are you synchronizing the information with the Info dictionary?

Yes, that is correct.

What part of the Acrobat SDK were you thinking of using? IAC/COM?

You'll need to license a library or tool that enables that
feature. Anything from the Adobe PDF Library to 3rd party libraries
and command line tools.
