Actually this is not quite true. In 7.0 you do not need to have a Tagged PDF to export to XML. Acrobat will export XML for all documents, however without tagging the quality varies wildly.

Also, you can add your own mapping tables to the SaveAsXML pluging to enable it to export to any flavour of XML or other language you want. The tables are complex and laborius to generate but you can do it. See:
