Topic: Need advice for creating a large library of interactive forms

Hi everyone. I'm an all around newbie--new to Planet PDF, new to Acrobat, and new to creating interactive forms. I have to create a library of more than 500 interactive forms for a new business I am involved in. Due to the cost, hiring this project out is not an option. I'm going to have to do it myself. I would like some guidance or advice on whether or not Acrobat 7.0 Pro is the right product for what I seek to do. I have downloaded the 30 day free trial and have successfully created one 45 question interactive form (and it works!!!), but I would like some experienced users input before I decide whether or not to purchase the program.
Here is a basic description of what I need from these forms. We are starting a subscription legal service for small businesses. The forms I need to create are actually questionnaires that we will send by e-mail to our clients, which they will fill out and return to us, so that we can prepare whatever legal document they are requesting. Each document will have its own questionnaire. In other words, the completed questionnaire will contain all the information we need to prepare their document. We want our clients to have the option to complete the form on their computer and email it back to us, or print the form, fill it out by hand, and return it by snail mail or fax. Acrobat Pro 7.0 and LiveCycle Designer seem to fit the bill, but I am so new to all of this, I'm not confident in my ability to judge.
