This may or may not help....
When I have to extract a documents (especially non-sequential sets, individual pages, etc), I do not use the "extract pages" option... I use "print." I "print" to another PDF file.
The reason why is because of the "print range option" when you print. If you have the numbers of the pages you want to extract from the PDF, you can type them in all at once, using commas and dashes. (Example: 2, 5, 40-55, 146, 1667-1777).
Now, this method doesn't delete the pages you've entered (which is an option when you "extract"), but at least it gives you a quick way of creating a subset of the main document, without having to fight with the rather limited "extract" function.
