Minor comment. Much of this isn't PDF information at all, it's a human perception of what is seen on a page.
Footer - some text near the bottom. Only you can decide whether this is ordinary text, a footer, or something else.
Header - ditto.
Watermark - by and large, ditto.
Acrobat plug-ins can retrieve all this information, subject to the above. You would need to be thoroughly familiar with the PDF Reference (file format) before starting.
