I will try to answer one of your questions.
There is nothing exceedingly preverse about PDFs that are "exported" from
Illustrator versus those created through PostScript and Distiller. In
other words, they RIP pretty much the same. In theory, "export to PDF"
should be faster and more reliable since it has one fewer processing steps.
The good news is that if you ever had a problem, you already have an
alternative approach to try and solve it.
I will leave the question of "editing of pdf documents" to others.
