1. Acrobat Reader cannot change PDF files in any way. It is just a Reader.

2. The full Acrobat product has some ability to edit PDF files but it is very limited. You may be able to get the results you need by preparing the symbol in a second PDF file, and using copy/paste from one PDF to the other.
