If you are doing this on a one-time or occasional basis, Capture is slightly expensive, (over $500 for single-user license,)and more than a little bit funky and complex. You might want to check out Abbyy FineReader, which is simpler to use, has superior OCR, and is quite inexpensive. ($100) www.abbyyusa.com
Another approach is to let a service bureau do the work for you. This avoids all capital expenditures, learning curve, etc etc etc. I am the president of one such bureau: feel free to contact me off-forum and I will be happy to discuss the needs of your project.
