That's a question that is hard to answer since things can be very different from one area to another. I live in Eastern Canada and the whole PDF situation is dismal. People and companies are very conservative and not easily convinced to switch over to new technologies. So there is little if any PDF related work in this part of the world.
However I know things are different in other places in Canada. I scan the jobs newsgroups regularly and there seems to be a lot of interest in PDF in Ottawa, Toronto and Vancouver. PDF seems to be a non issue anywhere else in the country (even in Montreal).
You might be able to get a better answer if you were to specify where you are located or looking for work.
There is much PDF work to be done over the internet, but my experience is that people want it for free, and even if they are willing to pay, collecting payment is extremely difficult at best. I have never made a dollar doing PDF work over the net. It's just too simple for a company to disappear into cyberspace once you've delivered and I have never encountered anyone willing to pay you up front.
No doubt some people are doing work successfully over the net and I do too, but it has never paid well for me.
