Topic: Colour source to B&W (greyscale) output?

[OS: Windows 98SE, Doc Source: Quark v4.1, Acrobat: v4.05]
Colleagues have been asked to provide PDFs of their Quark source docs in B&W Greyscale as well as colour. The production process at present is to create a B&W copy of the colour Quark doc and then print each via Distiller, resaving as optimised in Acrobat. The design team would like to avoid having to make the B&W source doc.
Is it possible to put a colour source PS job to Distiller and have it converted on the fly whilst creating the PDF? I'm assuming we'd save a separate set of job options for each output colour space. The help PDF on Distiller params seems to indicate this might be possible but I'm out of my depth. (Note: I understand a little about Windows colour management, the 'design' team even less!).
If not by the above method, how should one go about this?
