I am not sure I understand. Fonts are already in "human
readable" format - the glyph at offset 65 should be an 'A'.

I believe the "problem" that you are seeing is that when a
font is subsetted in a PDF (instead of full embedded), you end up
with a custom encoding since there are now less than the full set of
characters/glyphs.

The font HAS the correct encoding for what is embedded -
there is no "correcting" that. However, if your goal is to extract
data from a PDF with text in a custom encoding, you will need to
parse the font information, encoding tables, and differences array
and apply your own mappings. This is what Acrobat, GhostScript,
PDFText, etc. all do!
