George,

you seem to hit some limits of your Acrobat installation. Exchange 3 is
known for some memory leaks and also for some not immediately releasing
some system resources. Terminate and restart Acrobat helps a lot with this
problem.

Another thing to look at is the font question. Check your font embedding
options. You might have to _deactivate_ font subsetting (and maybe even
embedding). You then could try to use PitStop to fix the fonts and embed
them at that time.

Another suggestion is to update to Acrobat 4.05. Acrobat 4 is a bit less
resource-hungry than Acrobat 3.

A last thing to look out for would be plug-ins to add individual PDFs into
one single document.
