The user name is freely available in the signature dictionary if the
document was signed using Adobe's PPKLite.
Are you using PPKLite to sign the documents? What are you using on
the server to parse the PDF file? Are you trying to find the user
name in a submitted FDF file as opposed to the PDF file?
