Do the multiple documents have fields with the same name??
If so, and if you want DIFFERENT values in those fields - then you
are out of luck :(. Acrobat only has a single set of form fields
for an entire document, and they are "keyed" by name - so only one
field per document per name.
The way to solve this problem is to first merge the data into
each separate document with "form flattening" enabled (this turns the
form fields into "real" content), THEN merge the documents together.
