You assign a value to a hidden field the same way you assign it to a
visible one.

If you are thinking JavaScript, you must be aware that the Acrobat
Forms JavaScript has not much in common with the client side
JavaScript you might be used to. Both implementations are based on
the Core, but then have their own objects. If you come from
client-side (Netscape) JavaScript implementations, you will have to
change your way of thinking.

Hope, this can help.
