In Web Capture, you can set custom page widths and choose font defaults,
and in HTML you can supply typeface hints of various sorts.

If WebCap is not doing the job for you, I'd suggest downloading the whole
site (using site management software) to hard disk, then open it in Word or
a DTP program and lay it all out the way you want, then output to PDF. You
really can't expect HTML to deliver pages ready for prepress (even
pre-ebook press). HTML and DTP still have quite a huge gap between them and
it is not reasonable, IMHO, to expect Acrobat or Web Capture to bridge that
gap, per se. Creating nice A5 pages is going to require a bit of fussing by
hand with layout elements. It's sad, but that (to me) is the current state
of the art.
