I am looking for either a developed program (I can demo or purchase) that will allow batch updates to the Document Property data of PDF files. Ideally, I would like to find something that would let me see in a spreadsheet or database the existing data, then allow me to modify and pass it back to the documents.

What I'd REALLY like to find is a developed program that would allow me to apply mode advance meta-data (I think this is the purpopse of the XMP spec) to already existing PDFs).
