Topic: Looking for code/library to read/modify/save PDF files

I just started working with PDFs, and I'm struggling to find the best way to approach a fairly simple problem. Basically, I want take a bunch of pre-prepared PDF docs, and do a search and replace on specially marked fields in them based on a list of values passed (continuously) into my app. I first planned to use the Adobe API, but I see it isn't thread-safe, which is a bit of a problem since I want to process several docs at the same time. If I could find a library that would let me open a PDF file directly (without Acrobat), search for marked fields, replace them, and save out the file again, that would be ideal. Anyone know of anything like that out there? I took a look at the file format specification, but it looks a bit daunting to start from scratch. :-)
