A couple of questions...
1) When you say "capture", I assume the posting the results to a web server
will be OK, yes?
2) Do you mean validate (as in the signature and data are correct and
match) OR that you will authenticate the signature of the person against an
existing trust hierarchy?

That's fine, though you also want to look at form designing tools
such as Adobe's, and others...

The ONLY way to Reader Enable a PDF is to purchase a copy of Adobe
Document Server + Reader Extensions.

That is one way to process the incoming data from the form. You
could also have the data submitted as XFDF (an XML varient of FDF).

If you use FDF or XFDF (in Acrobat 6), yes.

Nope. You have to do anything validation and/or authentication
yourself.
