Go all the way to 6, since the upgrade price from Adobe is the
EXACT SAME!!

Acrobat 6 does an EXCELLENT job of table extraction out of the box...

For what you described as your use, I don't see any immediate
benefit for Pro unless you plan to use the prepress features such as
Preflight and PDF/X support.
