You need to go back and read the Acrobat License agreeement
concerning installation/use on servers - it is NOT ALLOWED. You
would need a special license from Adobe to enable this.

Although it doesn't do watched folders, APSplit
(http://www.appligent.com) is available for Mac OS X and can be
driven with AppleScript and Folder Actions.
